Beef and Snow Peas with Oyster Sauce
This is a classic, quick, and easy stir-fry where the oyster sauce does all the heavy lifting in terms of flavor and glaze.

Ingredients
| 1 pound | 455 g | sirloin strip steak, thinly sliced |
| 1 tablespoon | 15 ml | sugar |
| 1 tablespoon | 15 ml | rice wine |
| 1 tablespoon | 15 ml | cornstarch |
| 2 tablespoons | 30 ml | vegetable oil |
| 3 tablespoons | 45 ml | crushed and chopped fresh ginger |
| 2 | garlic cloves, crushed and chopped | |
| 1 | medium onion, cut into 1/4-inch strips | |
| 24 | snow peas or sugar snap peas | |
| 1 bunch | scallions (6 to 8), cut into 1-inch pieces | |
| 1/4 cup | 60 ml | oyster sauce |
| — | Steamed rice or noodles, for serving |
Instructions
- Seal the steak, sugar, rice wine, and cornstarch in a large zip-top bag. Massage for 2 minutes.
- In a wok or large cast iron skillet, heat the oil over high heat until it shimmers. Add the ginger and garlic and stir-fry for about 1 minute, until lightly browned.
- Add the marinated steak and stir-fry for 1 minute. Add the onion and stir-fry for 1 minute. Add the snow peas and stir-fry for 1 minute. Add the scallions and stir-fry for 1 minute. Add the oyster sauce and stir-fry for 1 minute.
- Serve over steamed rice.
SUBSTITUTION TIP: If someone is allergic to oyster sauce, replace it with Vegetarian Oyster Sauce.
