Beef Steaks with Vermouth and Cream
Lightly pounded beef fillet steaks fried in butter and finished in a sauce of dry white vermouth and cream.

Ingredients

| 30 g | butter | |
| 100 g | cream | |
| 4 tbsp | 60 ml | dry white vermouth |
| — | lemon juice | |
| — | black pepper | |
| — | salt |
Instructions
- Season the lightly pounded steaks with salt, black pepper and lemon juice.
- Fry them on both sides in very hot butter, pour over the vermouth and add the cream.
- Swirl the pan over the burner until the vermouth blends with the cream.
- Then braise the steaks over low heat for about 3 minutes, until the sauce thickens.
