
Beef with Blueberries

Ingredients
| 1 kg | beef (one whole boneless piece) | |

| 1 cup | 240 ml | blueberries (for the sauce) |
| 1/2 cup | 120 ml | freshly squeezed orange juice |
| 1/2 cup | 120 ml | red wine |
| 1/2 cup | 120 ml | balsamic vinegar |
| 1 tbsp | 15 ml | brown sugar |
| — | salt | |
| — | freshly ground black pepper |
Instructions
- Rub the beef with salt and black pepper. Place it in a pan with heated fat to brown evenly. Then place it in greased foil, wrap it well and roast for 2 hours at 160 degrees.
- Meanwhile, prepare the sauce: puree the blueberries with 2 tbsp water and strain them through a sieve.
- In a vessel on the stove, bring the orange juice, wine and balsamic vinegar to a boil with the sugar. Once they boil and the liquid reduces a little, add the blueberry sauce and stir. Leave on the stove until the sauce thickens slightly.
- Toward the end, add the reserved 1/3 cup whole blueberries and remove from the heat after 5 minutes. Season with salt and black pepper to taste.
- Place the piece of beef on a large plate and slice it into medallions with a sharp knife. Pour the blueberry sauce over it generously and serve.
