Beef with Peaches and Red Peppers

Ingredients
| 450 g | beef (topside) | |
| 2 tbsp | 30 ml | soy sauce |
| 3 tbsp | 45 ml | oil |
| 2 | red peppers, cut into pieces | |
| 300 ml | tomato purée | |
| 1 bunch | spring onion, cut into pieces | |
| 1 1/2 | ginger, finely grated | |
| 3/4 tsp | 3.8 ml | cornstarch |
| 2 | peaches, large, peeled and diced |
Instructions
- Cut the beef into medium-large cubes. Pour the soy sauce into a bowl and add the beef to season it.
- Heat 2 tsp of oil in a frying pan over medium heat. Add the chopped peppers and fry them, stirring often, until crisp.
- Remove the peppers and in the same pan add 1 tsp of oil, in which to fry the spring onion. Remove the onion and add it to the peppers.
- In a small bowl mix the ginger and the cornstarch with a little oil.
- In the same pan add the remaining 1 tbsp of oil, pour in half of the meat and fry until done, then add to the vegetables.
- Fry the rest of the meat too and add the vegetables, as well as the first portion of fried meat.
- Cut the peaches, which are best firm and not overripe. Pour the tomato purée over the meat, along with the peaches, and cook until the liquid starts to thicken and comes to a boil.
