
Beef with Quinces
Serves 4.
Ingredients

| 2 | quinces | |
| 2 | onions | |
| 2 | tomatoes | |
| 2 cloves | garlic | |
| 1/2 l | white wine | |
| 1/2 l | water | |
| 4 sprigs | thyme | |
| 2 tbsp | 30 ml | blueberry jam |
| 2 tbsp | 30 ml | butter |
| 2 pinches | cinnamon |
Instructions
- Cut the beef (1/2 kg) into cubes and sear well on all sides in a deep pot. Remove and in its place add the finely chopped onion (2), garlic (2 cloves) and sprigs of thyme.
- Once the onion has softened, return the meat to the pot. Add the grated tomatoes (2), the wine (1/2 l), the water (1/2 l) and the blueberry jam (2 tbsp) and leave to simmer for about an hour to an hour and a half.
- Meanwhile, melt the butter (2 tbsp) in a frying pan and add the quinces (2), cut into half-moons, and the cinnamon (2 pinches). Braise for about 15 minutes. They should get a golden crust.
- Shortly before the beef is ready, add the braised quinces to it and leave to simmer for another 10-15 minutes.
