
Bibim Guksu (Cold Spicy Korean Mixed Noodles)
Cold thin wheat noodles tossed in a tangy, sweet and spicy gochujang sauce, topped with fresh garnishes like cucumber, Asian pear and boiled egg.
Ingredients
| 8 oz | 225 g | somyeon (thin wheat noodles) |
| 3 tbsp | 45 ml | gochujang |
| 1 tbsp | 15 ml | gochugaru |
| 3 tbsp | 45 ml | water |
| 3 tbsp | 45 ml | sugar |
| 3 tbsp | 45 ml | rice vinegar |
| 1 tbsp | 15 ml | sesame oil |
| 3 tbsp | 45 ml | soy sauce |
| 2 | garlic cloves | |
| 2 tbsp | 30 ml | crushed sesame seeds |
| — | garnishes: roasted sesame seeds, julienned cucumbers, Asian pears, boiled egg, cabbage |
Instructions
- Bring a large pot of water to a boil. Add the somyeon noodles and cook per package instructions (usually about 3 minutes - remove immediately as they overcook easily). 2. Drain and rinse under cold water until completely cooled. Set aside. 3. In a large bowl, make the sauce by mixing the gochujang, gochugaru, water, sugar, rice vinegar, sesame oil, soy sauce, garlic and crushed sesame seeds until well combined. 4. Add the cold noodles to the same bowl and toss with the sauce until evenly coated. 5. Transfer to serving bowls and top with your choice of garnishes - cucumber, Asian pear, boiled egg, cabbage and a sprinkle of roasted sesame seeds.
