
Blackberry foam with elderberry
This foam made from blackberries and elderberries has a strong flavour with an airy mouthfeel. Creation by Dennis Steenbergen, De Hoefslag restaurant, Amsterdam.
Ingredients
| 180 ml | blackberry coulis |
| 65 ml | milk |
| 50 ml | cream |
| 1.2 g | lecithin |
| 70 ml | elderberry juice |
Instructions
Preparation method
- Use the hand-held blender to mix the coulis, juice, milk, and cream.
- Add the lecithin and dissolve it in the mixture.
- Create a foam by pulsing the mixture with the hand-held blender.
Serving suggestions
- As a component in a dessert with blackberry and basil panna cotta, strained yoghurt sorbet, and marinated blackberries.
- As a component in a dessert with an exotic fruit salad and mascarpone ice cream.
