
Blue Pea Rice

Ingredients
| — | Rice – 2 cups |
| — | Edible blue pea flowers – 10-12 |
| — | Finely chopped fresh ginger – 1½ tbsp |
| — | Crushed cardamom pods – 3 |
| — | Pandan leaves – 3 |
| — | Black pepper powder – 1 tsp |
| — | Salt to taste |
| — | Oil as required |
Instructions
- Clean and soak rice for 30 minutes. Heat oil in a pan and saute ginger and cardamom pods till aroma comes out.
- Now, add drained rice, pea flowers, black pepper powder and fry for a minute.
- Pour sufficient fresh water, salt, pandan leaves and let it cook until done.
- One can pressure cook the rice until 3-4 whistles. You can also prepare this recipe in a spicy way by adding desi spices and herbs such as lemon grass and kaffir lime leaves. Wanna taste this non-veg version of blue pea rice? Then prepare it with chicken, meat and prawns which makes you fall for it. Note: One can use dried flowers instead of fresh flowers. Soak the dried flowers in sufficient water to extract the colour and flavour of the flowers. Strain and separate the soaked flowers from the water. Cook the rice with the extracted water.
