
Bean Stew with Prunes
Ingredients
| — | 2 tea cups red beans |
| — | 1 head red onion |
| — | 1 teaspoon red pepper (paprika) |
| — | salt, black pepper |
| — | fresh spearmint leaves |
| — | 10 pitted prunes |
| — | oil for frying |
| — | a few sprigs of fresh parsley |
| — | 500 ml vegetable broth |
| — | 1 teaspoon apple cider vinegar |
Instructions
- Soak the beans overnight, and the next day rinse and boil them. In a pot heat the oil, fry finely chopped red onion and add the beans.
- Season with salt, black and red pepper to taste. Stir and add finely chopped parsley and spearmint. Add the prunes, the vinegar and the broth.
- Reduce the heat and simmer over low heat for 30-40 minutes. Cool, portion the dish into bowls and serve.
