
Caesar dressing with aged cheese
A dressing based on the classic salad named after the Italian restaurateur Caesar Cardini. The addition of old cheese gives this dressing an extra umami boost! Makes 600ml.
Ingredients
| 2 cloves | garlic | |
| 25 g | aged cheese, grated | |
| 3 | very fresh eggs (or 150g pasteurised whole egg) | |
| 1 tbsp | 15 ml | Dijon mustard |
| 1 | lemon, juice | |
| 6 | anchovy fillets | |
| 500 ml | olive oil | |
| — | salt and pepper (as needed) |
Instructions
- Mix all the ingredients, except for the oil, in a blender.
- Add the oil in a thin stream to create a nice emulsion.
- Season with salt and pepper (please note that the anchovies and cheese contain a lot of salt).
Serving suggestions:
- As a dressing for the famous Caesar Salad.
- As a flavour enhancer on rolls and sandwiches.
- As a basic ingredient for a herb dressing.
