Cajun Dirty Rice

A Louisiana Cajun classic in the Instant Pot: pork sausage and chicken livers cooked with the holy trinity of onion, celery and bell pepper, Creole seasoning and rice. Can be served as a main course or a side.

Ingredients

1 lb455 gpork sausage
0.5 lb225 gchicken livers, finely chopped
1large onion, chopped
2celery stalks, chopped
0.5green bell pepper, chopped
1 Tbsp15 mlminced garlic
1 Tbsp15 mlCreole seasoning
1 tsp5 mldried thyme
1 Tbsp15 mlWorcestershire sauce
1 Tbsp15 mlhot sauce
2 cups480 mlwhite rice, rinsed
1.25 cup300 mlbeef broth
1 cup240 mlwater
1bay leaf
0.25 cup60 mlfresh parsley, chopped

Instructions

  1. Select Sauté on your Instant Pot. When the indicator reads "HOT", add your pork sausage. Stir until the meat has broken up, then add your chicken livers. Continue cooking and stirring until all the meat has browned.
  2. Add onion, celery, green bell pepper, minced garlic, Creole seasoning, dried thyme, Worcestershire sauce, and hot sauce. Stir and cook until onions and bell peppers have softened a bit, about 2 minutes.
  3. Add rice, beef broth, and water and stir with a wooden spoon, ensuring all brown bits are removed from the bottom. Place bay leaf on top of mixture.
  4. Press Cancel on the Instant Pot. Cover with lid, ensuring the valve is set to "Sealing." Cook on high pressure for 6 minutes, then allow it to natural release for 10 minutes. Release the remaining pressure by turning the valve to "Venting."
  5. Once all pressure is released, open and remove bay leaf. Add fresh parsley to rice. Fluff with a fork before serving.

Notes on Instant Pot Dirty Rice

  • If you like your rice more on the soft side, keep the water as is. For a firmer texture, reduce the amount of water by 1/4 cup.
  • This dish can be served as a Main Course or Side.
