Cajun Shrimp and Rice
This Cajun Shrimp and Rice is such a winner. With the tomatoes and thyme, this dish tastes so fresh and absolutely wonderful. Easy to prepare, a little spicy but that is what Cajun food is all about. Enjoy!
Ingredients
| 3 1/2 oz | 99 g | long-grain rice |
| 2 lbs | 905 g | large shrimp, peeled |
| 2 tbsp | 30 ml | olive oil |
| 1 tbsp | 15 ml | seasoning salt (Cajun, free) |
| 1 cup | 240 ml | bell pepper |
| 1 tbsp | 15 ml | minced garlic |
| 1/4 cup | 60 ml | green onions, chopped |
| 1/2 cup | 120 ml | Italian style stewed tomatoes |
| 1/4 tsp | 1.3 ml | dried thyme |
| 1/2 tsp | 2.5 ml | salt |
| 1/8 tsp | 0.6 ml | black pepper |
Instructions
- Cook rice according to package directions.
- While the rice cooks, take a large non-stick pan and put it over medium-high heat and add 1 tbsp of oil.
- Sprinkle shrimp with Cajun seasoning and toss to coat. Add shrimp to the pan and sauté for 4 minutes. Remove from pan and keep warm.
- Heat 1 tablespoon oil in the pan over medium-high heat. Add the garlic and sauté for 30 seconds.
- Add the green onions, thyme and bell pepper and stir-fry, sautéing for 3 minutes.
- Stir in the shrimp, cooked rice, salt and pepper, and tomatoes and cook for 1 minute.
