Ingredients
| 250 g | Sirloin or rump, trimmed & cut into 2-3 cm cubes | |
| 1 tbsp | 15 ml | Cornstarch |
| 3/4 tsp | 3.8 ml | Salt |
| 1/2 tsp | 2.5 ml | Black pepper |
| 1 tsp | 5 ml | Smoked paprika (optional) |
| 1 tbsp | 15 ml | Olive oil |
| 15 g | Light butter | |
| 4 cloves | Garlic, minced | |
| 120 ml | Beef stock | |
| 80 g | Light cream cheese | |
| 120 g | Fat-free Greek yogurt | |
| 40 g | Grated Parmesan | |
| 1 tsp | 5 ml | Dijon mustard |
| 1 pinch | Chili flakes, to taste | |

Instructions
- Pat steak dry; toss with cornstarch, salt, pepper, and paprika.
- Heat a large skillet on high with oil. Sear steak in a single layer 90 sec, flip 60-90 sec. Remove to a plate.
- Lower heat to medium. Melt butter; cook garlic 30 sec. Stir in stock; simmer 1 min. Whisk in cream cheese until smooth, then off heat whisk in yogurt, Parmesan, Dijon, lemon, chili, salt & pepper.
- Return steak to the pan and toss 30-45 sec to coat. Sprinkle parsley and serve—great over roasted potatoes, rice, or steamed greens.
