Chicken Biryani with Biryani Masala
How to make the best easy Pakistani one-pot mixed chicken biryani.
Ingredients
| 1/2 cup | 120 ml | oil/ghee |
| 1 kg | chicken (leg/thigh, not breast) | |
| 2 | onions (1 is for garnish) | |
| 125 g | crushed tomatoes (or passata) | |
| 1/3 cup | 80 ml | yogurt (preferably sour) |
| 3/4 packet | biryani masala (any mix is fine) | |
| 3 tbsp | 45 ml | ginger-garlic paste |
| 3 cup | 720 ml | basmati rice (washed and soaked) |
| 5 cup | 1.2 l | water |
| 1/4 bunch | chopped coriander (garnish) | |
| to taste | chopped mint (garnish) | |
| to taste | fried onions (garnish) | |
| to taste | red/orange food colouring |

This is by far the easiest Biryani recipe out there, considering it's genuinely a one pot dish. Sometimes you want a Biryani but boiling rice separately seems like a lot of effort sometimes. In comes my recipe! Mixed Biryani is a dish most people don't know about as it's not commonly eaten at home. Traditionally this kind of biryani they make at weddings, due to it's ease because boiling a top if rice separate isn't always possible for caterers. Some people call this pilau biryani, mix biryani and mixed biryani.
Steps
- Heat the oil in a deep pan over medium heat.
- Add onions and shallow fry until brown and remove half for garnish.
- Add chicken, cook for 1 min.
- Add ginger garlic paste, biryani masala, tomatoes & yogurt. Cook on medium for 15 mins, till half done.
- Add water, simmer till chicken is fully cooked and bubbling.
- Add the rice (washed & soaked), cook for about 15 mins, till holes appear on top.
- Add food colouring on top (optional).
- Cover with foil and steam (dumm) on lowest heat 15 mins, till done.
- Garnish with coriander, mint and fried onions.
