Chicken Biryani with Biryani Masala

How to make the best easy Pakistani one-pot mixed chicken biryani.

Ingredients

1/2 cup120 mloil/ghee
1 kgchicken (leg/thigh, not breast)
2onions (1 is for garnish)
125 gcrushed tomatoes (or passata)
1/3 cup80 mlyogurt (preferably sour)
3/4 packetbiryani masala (any mix is fine)
3 tbsp45 mlginger-garlic paste
3 cup720 mlbasmati rice (washed and soaked)
5 cup1.2 lwater
1/4 bunchchopped coriander (garnish)
to tastechopped mint (garnish)
to tastefried onions (garnish)
to tastered/orange food colouring

This is by far the easiest Biryani recipe out there, considering it's genuinely a one pot dish. Sometimes you want a Biryani but boiling rice separately seems like a lot of effort sometimes. In comes my recipe! Mixed Biryani is a dish most people don't know about as it's not commonly eaten at home. Traditionally this kind of biryani they make at weddings, due to it's ease because boiling a top if rice separate isn't always possible for caterers. Some people call this pilau biryani, mix biryani and mixed biryani.

Steps

  1. Heat the oil in a deep pan over medium heat.
  2. Add onions and shallow fry until brown and remove half for garnish.
  3. Add chicken, cook for 1 min.
  4. Add ginger garlic paste, biryani masala, tomatoes & yogurt. Cook on medium for 15 mins, till half done.
  5. Add water, simmer till chicken is fully cooked and bubbling.
  6. Add the rice (washed & soaked), cook for about 15 mins, till holes appear on top.
  7. Add food colouring on top (optional).
  8. Cover with foil and steam (dumm) on lowest heat 15 mins, till done.
  9. Garnish with coriander, mint and fried onions.
  10. Enjoy!
