Beef With Tomatoes Recipe

A classic Chinese stir-fry of marinated sliced beef with tomatoes, celery and spring onions in an oyster sauce base.

Ingredients

1 pound455 gbeef (such as sirloin or round)
2 tablespoons30 mloyster sauce (marinade)
1 tablespoon15 mllight soy sauce (marinade)
1 teaspoon5 mlgranulated sugar (marinade)
2 teaspoons10 mlvegetable oil (marinade)
1 1/4 teaspoons6.3 mlcornstarch (marinade)
4 large or 6 mediumlarge or medium tomatoes
2ribs celery
2spring onions (green onions, scallions)
2slices ginger
1garlic clove (peeled and chopped)
2 1/2 tablespoons38 mloil for stir-frying
2 teaspoons10 mlsugar
1/4 teaspoon1.3 mlsalt
1 tablespoon15 mlcornstarch mixed with 2 tbsp water (optional)
salt and pepper (to taste)

Instructions

  1. Gather the ingredients.
  2. Cut the beef across the grain into thin slices approximately 1 1/2 inches long.
  3. Combine the marinade ingredients in a bowl, stirring to combine.
  4. Add the beef, cover and marinate in the refrigerator for 15 minutes.
  5. Bring a large pot of water to a boil. Scald the tomatoes by plunging them briefly into the boiling water for about 1 minute.
  6. Remove the tomato skin and cut each tomato into 4 to 6 equal pieces. If preferred, leave the skins on.
  7. Cut the celery and spring onions on the diagonal into sections about the same length as the beef.
  8. Heat a wok over medium-high to high heat. Add 2 tablespoons of oil. When hot, add the garlic and cook briefly until aromatic, then add the beef. Let brown briefly, then stir-fry until it changes color and is 80 percent cooked. Remove from the wok; clean the wok if necessary.
  9. Heat the wok with 1/2 tablespoon oil. Add the ginger and stir-fry a few seconds, then add the celery, then the tomato. Sprinkle 2 teaspoons sugar and 1/4 teaspoon salt over top. Cover and bring to a boil.
  10. Re-stir the cornstarch/water mixture. Uncover the wok and push the tomatoes to the side. Add the cornstarch mixture in the middle, stirring quickly to thicken.
  11. Return the meat to the pan and mix everything together. Taste and adjust seasonings. Serve hot over rice.

Tip: Oyster sauce is available in the international or Asian sections of most supermarkets, near the soy sauce (Lee Kum Kee is a very good brand); it can also be found at Asian markets.
