
Chocolate Cream with Forest Berries
A rich stovetop chocolate custard cream chilled in small dessert cups and served with fresh forest berries.

Ingredients
| 5 broya | large eggs |
| 150 g | sugar |
| 170 g | cow butter, cubed |
| 220 g | chocolate couverture |
| 75 g | natural cocoa |
| 150 g | liquid cream (35%) |
| 1 k.l. | Cream of Tartar raising agent |
| 1 ch.ch. | forest berries - raspberries, blueberries, blackberries etc. |
Instructions
Serves: 8-10 pieces. Prep 20 min. Cook 15 min. Total 35 min.
- Beat the eggs with the sugar, but not for too long.
- Pour into a suitable small saucepan and add the cubed butter, the crushed chocolate couverture, the sifted cocoa, the cream and the raising agent.
- Place the pot over low heat and stir constantly until the butter and chocolate melt.
- Remove from the heat and pour the cream into suitable small dessert cups or bowls. Leave the chocolate cream to cool and place in the refrigerator. Serve with forest berries.
- For a more striking presentation, pour the cream into paper rings. Leave to set, remove the ring and serve the cream on a plate, again garnished with berries.
