Country Fair Cherry Pie

A double-crust cherry pie made with fresh tart cherries and decorated with pastry stars dusted in confectioners' sugar.

Ingredients

1 1/4 cups300 mlsugar
2 tbsp30 mlcornstarch
1 dashsalt
4 cups960 mlfresh tart cherries, pitted
1pastry for double-crust pie (9 inches)
confectioners' sugar

Instructions

  1. In a large saucepan, combine the sugar, cornstarch and salt; stir in the cherries until blended. Let stand for 30 minutes. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat.
  2. Line a 9-in. pie plate with the bottom crust; trim the pastry even with the edge. Fill with the cherry filling. Bake at 375°F for 45 minutes or until the crust is golden brown and the filling is bubbly. Cover the edges during the last 20 minutes to prevent overbrowning.
  3. Meanwhile, roll out the remaining pastry to 1/8-in. thickness. Cut into 12–14 large stars and 16–18 small stars; place on an ungreased baking sheet. Bake at 375°F for 8–10 minutes or until golden brown. Remove to a wire rack to cool. Sprinkle with confectioners' sugar. Place the stars randomly over the cooled pie. Sprinkle the edges of the pie with confectioners' sugar.

Cherry Almond Pie variation: Once the pie filling has been removed from the heat, stir in 1/4 teaspoon almond extract.
