Cuban Garlic Soup
A fragrant Cuban soup of fried garlic and stale bread, served either puréed as a cream soup or thickened with beaten eggs.
Ingredients
| 2-3 глави/heads | garlic, peeled cloves lightly crushed |
| 2-3 чаени чаши/teacups | pieces of stale bread |
| — | ground red pepper (paprika) |
| 1-2 кубчета/cubes | chicken or vegetable stock cubes |
| 1 л/L | water |
| 1 чаена чаша/teacup | grated white cheese or kashkaval |
| 1 чаена чаша/teacup | milk |
| 2 | eggs (second variation) |
| — | dry herbs or ground hot red pepper |
Instructions
- Fry 2-3 heads of peeled, lightly crushed garlic cloves. Once lightly golden, add 2-3 teacups of stale bread pieces.
- When the bread turns golden, sprinkle with ground paprika and 1-2 chicken or vegetable stock cubes crushed to a powder, then pour in 1 L water.
- Let it simmer over low heat, stirring occasionally.
- Add 1 teacup of grated cheese or kashkaval and 1 teacup of milk and leave a little longer over very low heat.
- You may purée it with an immersion blender or in a blender and serve as a cream soup. Second variation: pour 2 lightly beaten eggs into the soup and stir well — when the soup turns to "threads", it is ready.
- Season with dry herbs or ground hot red pepper.
