Dark Chocolate Ganache
Dark chocolate macaron shells with a dark chocolate ganache filling.
Ingredients
| 3 | large egg whites |
| 200 g | powdered sugar |
| 125 g | almond flour |
| 15 g | high-quality black cocoa powder |
| 30 g | granulated sugar |
| — | brown gel food coloring |
| 120 g | dark chocolate (70%) |
| 80 g | unsalted butter |
| 30 g | cream |
| — | crushed cacao nibs, for sprinkling (optional) |
Instructions
For the ganache: Melt the chocolate, butter and cream together over a water bath. Stir well, remove from the heat and leave to cool. Transfer to a bowl with a lid and leave in the refrigerator until set.
For the shells: Sift the sugar, flour and cocoa and mix well (a food processor also works). Sift again.
Make a French meringue. Add the brown coloring. (If you don't have it you can make it by mixing the following colors: 1 drop green, 3 drops red, 3 drops yellow.) The mixture may look slightly yellow but everything will be fine once you add the flour with the cocoa.
Add the dry ingredients slowly in several additions and mix well.
