Earl Grey Tea Macarons with Honey Buttercream Filling.
VARIANT 1 (Earl Grey / Honey lavender buttercream):
- (Prepare in advance) LAVENDER SUGAR: Measure 1/4 granulated sugar into a bowl. Add a few fresh lavender leaves/petals. You can crush them so they release their essential oil. Leave overnight. Stir before use.
- EARL GREY Buttercream: Make a strong tincture from the tea and lavender. Wait until it cools. Make the buttercream and add the tincture.
- Option: Add crushed lavender to the cream.
VARIANT 2 (Lavender macarons with Earl Grey ganache):
- Warm the cream in a small saucepan over medium heat. Steep the tea in the cream, pressing with a fork so the tea infuses.
- Bring the mixture to a boil, stirring often and pressing the tea bags. Continue like this for about 5 minutes.
- Pour the tea-infused cream over the chocolate chips. Stir well. If needed, reheat the chocolate to melt it completely. Refrigerate until set.
VARIANT 3 (Earl Grey with orange white chocolate): Same as the recipe above, only the orange peel is added to the cream (for the white-chocolate ganache).
