Ingredients
| 1.5 cup | 360 ml | long grain rice |
| 1.75 cup | 420 ml | water |
| 1/2 cup | 120 ml | brown lentils, cooked separately |
| 1/2 cup | 120 ml | small pasta, cooked separately |
| 1 can | crushed tomatoes | |
| 2 clove | garlic, minced | |
| 1 teaspoon | 5 ml | cumin |
| 1 | onion, sliced thin and fried crisp | |
| for serving | vinegar for serving |
Instructions
A layered dish of rice, lentils, and pasta topped with a tangy tomato sauce and crispy onions, koshari is street food that eats like a full, balanced meal.
- Cook rice on White Rice with water.
- Simmer crushed tomatoes with garlic and cumin in a small pan for 10 minutes to make the sauce.
- Fry sliced onion in oil until deeply golden and crisp, draining on paper towels.
- Layer rice, lentils, and pasta in bowls, top generously with tomato sauce and crispy onions, and finish with a splash of vinegar at the table.
