Empress Chicken

A spicy Sichuan-style fried chicken stir-fried with dried hot peppers and Sichuan peppercorns in a savory-sweet sauce.

Ingredients

2 tablespoons30 mlcornstarch (for marinade)
1 tablespoon15 mlsoy sauce (for marinade)
1 tablespoon15 mlrice wine (for sauce)
2 tablespoons30 mlsoy sauce (for sauce)
1 tablespoon15 mlsugar (for sauce)
1 teaspoon5 mlsalt (for sauce)
1 teaspoon5 mlcornstarch (for sauce)
1 teaspoon5 mlsesame oil (for sauce)
1 pound455 gboneless chicken, chopped into 1-inch pieces
1 cup240 mlcooking oil
10dried hot red peppers or according to taste
1 teaspoon5 mlSichuan peppercorns (Chinese coriander)
1 teaspoon5 mlginger, minced
4 cups960 mlrice for serving

Instructions

  1. Mix the chicken, cornstarch, and soy sauce in a bowl. Let it marinate for 30 minutes.
  2. Combine the ingredients for the sauce and set it aside.
  3. When the chicken is ready, heat a wok over high heat. Add the oil and fry the marinated chicken until browned. Use a slotted spoon or spider strainer to remove it to a cooling rack or paper towels.
  4. Remove any oil from the wok in excess of 2 tablespoons.
  5. Saute the dried peppers and Sichuan peppercorns for about 30 seconds.
  6. Return the pre-fried chicken to the wok. Add the ginger and stir-fry for 1 minute.
  7. Stir in the sauce and cook until thickened.
  8. Serve hot, with rice.
