
Festive Chocolate Cake with Liqueur

Ingredients

Instructions
Prep 40 min. Cook 40 min. Total 80 min. Serves 10–12 pieces.
- Turn the oven on to heat to 200°C. Line the bottom of a 20×30 cm pan with baking paper greased on both sides. Instead of flour, dust with cocoa and shake off so it spreads evenly.
- Beat the eggs with the sugar into a smooth, fluffy cream, gradually add the flour and finally the butter. Once the mixture is homogenized, add the cocoa, the espresso and the liqueur. Pour into the pan and bake the sponge.
- For the mousse, beat the egg yolks with the sugar until the sugar dissolves completely. Melt the chocolate and whip the cream. Quickly beat 1/2 of the cream and all of the chocolate into the egg mixture, then slowly fold in the remaining cream. Separately beat the egg whites to stiff peaks and fold them into the cream.
- Cut 2 layers from the baked and cooled sponge. Soak them with a little liqueur and sandwich them with the mousse. Spread the whole cake with mousse on top. Leave the cake for a few hours in the fridge to let the mousse set.
- After that, combine all the topping ingredients in a bowl over a water bath until the chocolate melts. Remove from the heat and stir until the topping cools and thickens slightly. Spread it over the chilled chocolate liqueur cake. Decorate the festive cake as desired and put it in the fridge for a few more hours.
