Filipino-Style Rice with Shrimp Paste Sauce
A Filipino-style rice dish flavored with shrimp paste, ginger, hoisin and pork, garnished with mango, spring onion and egg.
Ingredients
| 1/4 cup | 60 ml | cooking oil |
| 1 | garlic clove, crushed | |
| 3/4 cup | 180 ml | thinly sliced onion |
| 1 1/2 tbsp | 23 ml | ginger, grated into strips |
| 2 | green hot chillies, seeded and sliced diagonally | |
| 250 g | pork mince | |
| 1/4 cup | 60 ml | shrimp paste |
| 1 tbsp | 15 ml | hoisin sauce |
| 7 cups | 1.7 l | cooked rice |
| 1 1/4 cups | 300 ml | mango, cut into strips |
| 1 stalk | spring onion, chopped | |
| 1 | egg, cooked as an omelette and chopped | |
| 200 g | tomato sauce |
Instructions
- Fry the garlic, onion, ginger, hot green chillies, pork mince and shrimp paste in the oil for 5 minutes.
- Add the tomato sauce and hoisin sauce. Cover and cook another 5 minutes, stirring from time to time.
- Add the cooked rice and half of the mango. Cook and stir another 2 minutes. Garnish with the spring onion, the remaining mango and the egg.
