Five-Spice Poached Pears in Wine

A Chinese-inspired dessert flavored with Chinese five-spice powder. Make it in advance and serve it warm, at room temperature, or refrigerated. If using unripe pears, poach them a little longer. Gluten-free, soy-free, vegetarian.

Ingredients

3Ripe pears, cored and sliced into 24 wedges
1 bottleFruit-flavored dessert wine
3 tablespoons45 mlCrushed and chopped fresh ginger
1 tablespoon15 mlChinese five-spice powder

Instructions

  1. In a shallow pan, place the pears, dessert wine, ginger, and five-spice powder. Add more wine or water to just cover the pears.
  2. Bring to a simmer over medium heat and cook the pears for about 30 minutes, turning them once, until the liquid is reduced by half and the pears are easily pierced with a fork.
  3. Transfer the pears to a covered bowl and refrigerate.
  4. Reduce the sauce by half again, over medium heat, for about 30 minutes. Remove from the heat and let cool, depending on the desired temperature for serving.
  5. Serve the pears with cold or room temperature syrup.

Substitution tip: Any sweet wine can be used instead of dessert wine. Another good option is ice wine, which is a sweet wine made from grapes that have been frozen on the vine.
