
Fluffy Bites with Cheese and Kashkaval
Savory choux-style bites made from a boiled water-and-butter dough with eggs, folded with cheese and kashkaval and baked until golden.

Ingredients

| 60 г | butter |
| — | flour (one level 100ml measuring cup) |
| 2 | eggs |
| 50 г | sirene (white brine cheese) |
| 50 г | kashkaval (yellow cheese) |
| — | salt, black pepper and thyme to taste |
Instructions
Note: A double batch makes a whole oven tray of the dark trays. Reduce the fat by at least half, and maybe a little more flour.
(makes about 15 pieces)
- Bring the water to a boil. Add the butter and stir until it melts. Salt it. Add the flour and stir constantly until you get a smooth mixture.
- Transfer the mixture to a suitable bowl, add the black pepper and thyme. Add one egg, stir, then the second egg and stir again until homogeneous.
- Add the crumbled cheese (sirene) and finely grated kashkaval and stir again.
- Using two spoons, form balls the size of a large walnut and arrange them on a tray lined with baking paper. Leave a little space between the balls.
- Bake in a preheated 200°C oven for about 20 minutes or until browned.
