
Fluffy Rose Bun
A soft, fluffy bun shaped from little rolled-up dough roses.
Ingredients
| 200 ml | fresh milk | |
| 100 ml | water | |
| 5 g | sugar | |
| 20 g | fresh yeast | |
| 1 tsp | 5 ml | salt |
| 1-2 | eggs | |
| 500 g | flour + a little more for kneading | |
| 90 g | cow's butter |
Instructions
Mix the fresh milk with the water and put them on the stove to warm slightly. In a bowl mix the yeast with the sugar and mash with a fork or spoon. Add the warmed milk with the water and stir. Add 1 egg if it is large, or 2 if the eggs are smaller. Stir again with a spoon. Finally add the flour, the salt and 30 g of butter cut into cubes and knead until a soft dough forms. Sprinkle the finished dough with a little flour, cover with a towel and leave to rise about 30 minutes. Melt the remaining butter in a water bath (bain-marie). Take the risen dough and divide it in two, so it is easier to roll out. Take the first piece, sprinkle it with a little flour and roll out into a sheet half a centimeter thick. Cut out circles using a water glass. Remove the leftover dough to roll it out again afterwards. Brush each circle with the melted butter. With a sharp knife make a small cut on one side of the circle. Roll from one end to the other so that a little rose forms. You can see exactly how it is done in the photo below. Grease the baking form with a little butter. Start arranging the roses from the outside inward. The ones on the very outer edge place lying down. Arrange the remaining roses slightly overlapping the front ones. Continue the same way with the rest of the dough until it is finished. I forgot to brush the first few roses with butter, but it was not that fatal. If you do not have time to wait for the bun to rise once more, put it in a cold oven. While it heats up, the bun will have risen enough. Bake it at 180 degrees about 40-50 minutes.
