French Dip Sandwiches

Tender pressure-cooked beef chuck roast piled on crusty rolls with melted provolone, served with a rich au jus for dipping.

Ingredients

3 pounds1.4 kgboneless beef chuck roast or bottom round roast
salt and ground black pepper
2 tablespoons30 mlolive oil
1 wholelarge sweet onion, chopped
4 wholelarge cloves garlic, sliced
0.5 cup120 mldry red wine
2 cups480 mlbeef broth
1 teaspoon5 mldried thyme
8 wholecrusty sandwich rolls, split
16 slicesslices provolone cheese

Instructions

  1. Season beef generously with salt and black pepper.
  2. Heat oil in inner steel pot of pressure cooker set to Sauté on Normal.
  3. Cook beef in hot oil until browned, 2 to 3 minutes per side; transfer to a plate.
  4. Stir onion into hot oil and cook until softened, about 5 minutes; add garlic and cook until fragrant, about 1 minute.
  5. Pour red wine into pressure cooker to deglaze, using the flat edge of a wooden spoon to scrape any browned bits of food from the cooking surface. Add beef broth and return beef and any juices to pressure cooker. Sprinkle thyme over the meat.
  6. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 50 minutes on High pressure.
  7. Allow pressure to release naturally for 15 minutes, then set steam vent to Venting to quick-release remaining pressure.
  8. Preheat oven to 350°F (175°C).
  9. Transfer beef to a cutting board and slice. Strain liquid remaining in the pressure cooker, reserving the liquid for au jus and keeping onions for the sandwiches.
  10. Arrange sliced beef into rolls and top with onions from the cooker. Top each sandwich with 2 slices provolone cheese. Place sandwiches on a baking sheet.
  11. Cook sandwiches in preheated oven until cheese is melted, 2 to 3 minutes; serve with the au jus for dipping.

Mealthy Tip: Sweet onions lack the sulfuric punch of regular onions. Look for varieties such as Maui Sweets, Vidalia Sweets, Texas Sweet, and Walla Walla Sweets. Best part is, they won't make you cry when you cut them!
