
French Lentils with Chicken
I made the whole dish in 40 minutes, entirely in the Philips Multicooker. First I fried the chicken fillets, which stayed very juicy and tender, and I spared myself the splatter of an ordinary pan. Then, keeping their aromas in the same pot, I cooked the lentils too, which practically cooked themselves while I played with Betty. I only stirred when adding a new ingredient; otherwise it does not need stirring.
Ingredients

Instructions
- Cut the chicken breasts into smaller pieces. Sprinkle them with black pepper, salt and red pepper (paprika). Pour a drizzle of olive oil into a non-stick pan and add the chicken fillets. Add sprigs of rosemary, thyme and the bay leaves. Add the unpeeled garlic cloves and cook 5-6 minutes per side.
- If working with a Multicooker, pour a drizzle of olive oil into the pot, arrange the chicken fillets, add the herbs and garlic, close the lid, set the FRY program for 10 minutes and cook the fillets until done, turning them halfway through cooking.
- Remove the fillets when they are ready and cover them so they stay warm.
- Blend the carrot, onion, celery and one sprig of rosemary in a blender. Sauté them in olive oil with a little water until softened. Add the lentils. Season with salt and black pepper. After a few minutes add the diced tomato. Blend the spinach in the blender and add it too.
- Finally add a drizzle of wine vinegar. Cook over medium-high heat until it absorbs the liquid. Remove from the heat and let it cool a little. Then stir 3-4 tbsp yogurt into the lentils.
- If cooking with a Multicooker, after removing the chicken pour a drizzle of olive oil into the pot and add the blended vegetables. Add a little water and set the FRY program for 30 minutes. Once softened add the lentils. Then the tomato, the spinach and finally the vinegar. When the set time elapses the appliance switches itself off. When it has cooled a little add the yogurt.
- Serve the lentils chilled, topped with two pieces of warm chicken fillet with the garlic cloves and sprigs of rosemary and thyme, and sprinkle generously with parmesan.
