French Macarons with White Chocolate and Dried Raspberries
French macarons filled with a glossy white chocolate and dried raspberry ganache.
Ingredients
| 100 g | white chocolate |
| 100 g | pastry cream (whipping cream) |
| 10 g | dried raspberries |
Instructions
Ganache:
- Break the white chocolate into a bowl. Place the cream and raspberries on the stove; when the liquid begins to boil, remove it and pour it over the chocolate. Stir until you get a glossy, homogeneous cream, then cover the bowl with cling film. Let it set in the refrigerator to the required consistency.
Assembly:
- Prepare 2 shells for each macaron, ideally of the same size. Place a small amount of ganache on one shell and press the other shell on top to sandwich them. Proceed the same way with all remaining shells. Store the finished macarons in a box in the refrigerator for 24 hours. After that they are ready to eat.
