1 pound455 gcenter-cut beef tenderloin
1 tablespoon15 mlbutter
2 clovegarlic, finely minced
0.5 cup120 mlred wine

  1. Add the beef and cream of onion soup to a lightly greased inner pot.
  2. Secure the lid. Choose the "Manual" mode and cook for 13 minutes at High pressure. Once cooking is complete, use a quick pressure release; carefully remove the lid.
  3. Press the "Sauté" button to preheat your Instant Pot. Melt the butter and cook the shallots until tender or about 3 minutes.
  4. Then, stir in the garlic; cook an additional 30 seconds or so.
  5. Pour the wine into the inner pot, scraping up all the browned bits on the bottom of the pan. Add the salt, pepper, and tarragon.
  6. Continue boiling the sauce until it reduces by half. Serve the sliced chateaubriand with the wine sauce and enjoy!
