Fried Wontons
Deep-fried, flavorful pork dumplings great for parties.

Ingredients
| 3/4 pound | 340 g | ground pork |
| 3 | garlic cloves, crushed and chopped | |
| 2 tbsp | 30 ml | soy sauce |
| 1 tbsp | 15 ml | fresh ginger, crushed and chopped |
| 1 package | square wonton wrappers | |
| — | vegetable oil, for frying | |
| — | Sweet and Sour Duck Sauce, for serving |
Instructions
Makes 4 dozen wontons. These deep-fried, flavorful dumplings are great for parties. They can be reheated in a 300°F oven for 10 minutes. Experiment with different fillings, such as chopped vegetables and tofu or chopped fruit and warming spices.
- Use a Chinese cleaver or chef's knife to chop together the pork, garlic, soy sauce, and ginger.
- Fill a small bowl with water. Place a wonton wrapper down so it looks like a baseball diamond with you sitting behind home plate. Place 1/2 teaspoon of filling on the pitcher's mound. With two fingers, paint the perimeter baselines with water from the bowl. Fold the wrapper in half, connecting home plate with second base to enclose the filling and form a triangle shape. Press firmly along the perimeter to remove excess air and seal the dumpling. Repeat with the remaining filling and wrappers.
- In a wok or Dutch oven, heat 1 inch of oil to 350°F, or until a wooden chopstick bubbles when placed in the oil.
- Place wontons, a few at a time, into the oil, and cook for 10 to 15 seconds, turning once, or until evenly golden brown.
- Serve immediately with the duck sauce for dipping.
Troubleshooting: Be sure the perimeter of the wonton wrapper is painted with water to ensure a good seal.
