Furikake Gohan Transformed

A Food Wars!: Shokugeki no Sōma dish: rice topped with fluffy egg and cubes of a gelled dashi-style broth that melt on contact with the hot rice.

Ingredients

8Chicken wings
15 gGinger
40 gKatsuobushi (dried bonito flakes)
To tasteDehydrated nori seaweed
To tasteSoy sauce
To tasteFish sauce
To tasteSake
To tasteSesame oil
5 sheetsNeutral gelatin
1 literWater
500 gGohan rice
2Eggs
To tasteSalt

Instructions

From Food Wars!: Shokugeki no Sōma.

  1. In a bowl with water, put 5 sheets of gelatin for 10 minutes to hydrate them.
  2. In a pot, put some sesame oil and pour in the 8 chicken wings. Cook over medium heat until golden brown. Add the peeled and chopped ginger, and add a dash of soy sauce, a dash of fish sauce and a dash of sake. Leave a couple more minutes on the heat to let the alcohol out of the sake. Add 1 liter of water, the nori seaweed and the katsuobushi. Mix well and leave to cook for 30 minutes.
  3. After a while, the water will be much reduced. Remove all the food inside the pot and strain the broth so that no lumps remain. Then, squeeze the gelatin leaves well and mix them with the broth. Put the broth in a lidded container and let it rest in the fridge for 3 hours.
  4. Place the gohan rice in a bowl and remove the starch with several cold-water washings. Once the water is completely clear, let it stand for 30 minutes in this water. After this time, strain the rice and add it to a pot with 700 milliliters of water.
  5. Put the pot on high heat until the water starts to boil. Lower the heat to medium and cover with a lid for 12 minutes or until the water has evaporated. When this happens, let it stand for 15 minutes without uncovering the pot.
  6. Cut the gelled broth into very small cubes. Beat two eggs and put them in a pan with hot oil. Stir with chopsticks to separate them into pieces and make all parts equal.
  7. Put in a small bowl the cooked rice, some of the egg and a few cubes of the gelled broth.
  8. The cubes in contact with hot rice will melt in a matter of seconds. Decorate with some chives.
  9. It is ready to eat now.
