Gallo Pinto (Costa Rican Rice and Beans)
Gallo Pinto is translated as "painted rooster". If you're up for Costa Rican dishes, this recipe is a must try. Best served with an egg, sunny side up or scrambled.
Ingredients
| 2 tablespoons | 30 ml | canola oil |
| 2 | garlic cloves, minced | |
| 1 | medium onion, finely chopped | |
| 3 cups | 720 ml | cooked white rice |
| 1 teaspoon | 5 ml | ground cumin |
| 2 cups | 480 ml | cooked black beans, drained and rinsed |
| 1 teaspoon | 5 ml | ground coriander |
| 3 tablespoons | 45 ml | Worcestershire sauce |
| to taste | salt & freshly ground black pepper | |
| optional | sliced green onion (optional) |
Instructions
Yields: serves 6.
- Heat oil in a large pan over medium heat. Add onion and sauté until it begins to change color. Add garlic and sauté until onion is golden.
- Add Worcestershire and spices, and stir into the onion and garlic.
- Add the beans and then the rice. Combine the beans and rice evenly and cook until the mixture is heated through.
- Add salt and pepper to taste and serve hot. Garnish with some chopped green onions if you prefer.
