Ingredients
| 350 g | cooked and cooled white rice (day-old) | |
| 4 tbsp | 60 ml | vegetable oil or coconut oil |
| 10 cloves | garlic, thinly sliced (yes, 10!) | |
| 1/2 tsp | 2.5 ml | salt |
| 1/4 tsp | 1.3 ml | black pepper |
| 2 | spring onions, chopped (optional) |
Instructions

- Heat oil in a pan over medium-low heat. Add the sliced garlic. Fry slowly until golden brown and crisp - do not burn.
- Remove half the garlic and set aside for garnish.
- Increase heat to medium. Add the cold rice to the remaining garlic and oil. Break up clumps and stir-fry for 3-4 minutes until the rice is heated through and slightly crispy at the edges.
- Season with salt and pepper.
- Garnish with the reserved crispy garlic and spring onions. Serve hot.
Chef's tip: Sinangag is the Filipino breakfast rice, often served with fried egg and cured meat (tocino or longganisa). On its own, it is a deeply savoury treat.
