Garlic Herb Roasted Potatoes are a perfect side dish for Thanksgiving & Christmas. Baby potatoes are pressure cooked for 8 minutes and then sautéed with seasoning until crispy on the outside and fluffy on the inside.

Garlic Herb Roasted Potatoes are a perfect side dish for Thanksgiving & Christmas. Baby potatoes are pressure cooked for 8 minutes and then sautéed with seasoning until crispy on the outside and fluffy on the inside.
- Scrub and wash the potatoes and set aside.
- To the Instant Pot, add water, potatoes and salt. Secure the lid, seal the valve and pressure cook for 8 minutes.
- Quick pressure release the steam valve. (I did not have any remaining water in the pot; but if you have any left, drain any remaining water and place the potatoes in a colander or a steamer basket.)
- Press the Instant Pot to Sauté mode. Add 2 tbsp of oil, Italian seasoning and garlic powder to the potatoes and give it a gentle stir.
- Allow the potatoes to sit in one place for 5-6 minutes before stirring them again. This allows the potato skin to brown and crisp.
- Gently rotate the potatoes and allow them to sit for another 5 minutes until brown and crisp.
- Repeat for another 5 minutes if required.
- Carefully spoon the potatoes to a serving bowl, season with more salt and pepper if needed. Garnish with herbs and serve.
