
Gel of salted lemon
Creation by Bas van Kranen, Bord'Eau restaurant, Amsterdam, the Netherlands. Makes 1 litre. Serving suggestions: Delicious in any dish that could use a tangy addition. In combination with oysters. In combination with various cold dishes with fish. In a dessert with sweetcorn, honey, and citrus.

Ingredients
| 150 g | salted lemon rind |
| 700 ml | water |
| 200 ml | lemon juice |
| 100 g | sugar water (1:1) |
| 5 g | Gellan |
| 5 g | agar-agar |
| 5 g | Citras |
| — | salt |
Instructions
- Finely chop the salted lemon rind in a food processor.
- Boil all the ingredients together.
- Simmer for five minutes to remove the flavour of the agar-agar.
- Leave to cool.
- Place in a blender and blend until you have a smooth gel.
