Candy Balls with Grapefruit and Amaranth Popcorn!

No-bake energy balls rolled in popped amaranth, with a long note on the science of how grains pop (expand): each grain has a little moisture inside; when heated rapidly at high temperature the moisture turns to steam; since the hard outer shell traps it, pressure builds until the shell bursts and the steam escapes with great speed, giving the grain an impulse (mass times velocity) so popcorn flies everywhere. Because the core reaches a high enough temperature, the inside is cooked and the popped grain is soft, crunchy and edible. This process is called expansion. Rules for popping (expanding) anything: 1) you need grains with a hard shell and a little moisture inside; 2) you need a pot with a lid and a strong burner; 3) heat the pot very well, add the grains, put the lid on (remember the impulse) and watch; 4) a glass-lid pot is best so you can see inside; if the burner is too strong the shell can scorch and become porous so no pressure builds; 5) suitable grains for home expansion are popcorn corn, amaranth and wild rice.

Ingredients

1grapefruit, large
1 1/2 ч.ч.rolled oats
1/2 ч.ч.coconut shavings
3 с.л.carob
2 с.л.honey (or more)
3 с.л.tahini
50 гcoconut oil
1 ч.ч.amaranth popcorn

Instructions

  1. Clean the grapefruit well from the white membranes and skins.
  2. In the bowl of a kitchen robot put the oats and grind them finely. You can skip this step if you use fine oats.
  3. Add the coconut shavings, carob, the grapefruit pieces, honey and tahini. Note: the honey is to your taste; if you do not like it too sweet add a little, otherwise more.
  4. Mix the mixture well (by hand if you have no robot) and transfer to a bowl.
  5. Melt the coconut oil over low heat, add it to the mixture and stir well.
  6. Leave the bowl in the fridge to set.
  7. Meanwhile make the popcorn: heat a pot well, add the amaranth, put the lid on, and when the grains start to pop begin shaking the pot so they don't burn. They are ready after 3-4 minutes at most. For 1 cup of popped amaranth you need roughly half a cup of raw amaranth, but add more in case some grains don't expand.
  8. From the mixture form balls the size of a walnut and roll them in the cooled amaranth popcorn.
