Green Pea "Cheeses"

Boiled split green peas puréed into a thick mash, set in molds and served with a butter or oil topping of onion, bacon or olives. Makes a nice starter. (1 tea cup = 240 milliliters.) I used dried organic peas, though it seems the same could be achieved with fresh; next time I will try and edit the recipe accordingly.

Ingredients

1 чаена чашаdried split green peas (or pea flour)
50 грамаcow's butter (or oil for the vegetarian version)

по желаниеfor serving: butter or olive oil, fresh or fried old onion, olives, bacon or your preferred topping

Instructions

  1. Wash the peas and pour them into a pot with boiling water (about 2 tea cups) over medium heat. Boil the peas for about 60 minutes or until done, occasionally adding water so the level stays about 0.5 cm above the peas.
  2. Purée the boiled peas, salt them, add spices if desired, the butter and the cream (also optional) and return to the heat so the excess water evaporates. You should get a thick mash.
  3. Line the bottom and sides of a small tray or another form with cling film, pour in the pea mixture, level the top and leave to cool completely.
  4. Once the mixture has cooled, turn it out into a suitable dish, remove the film and cut into shapes. If you portioned it into mini molds, there is nothing to cut — just eat :)
  5. In a pan melt butter or vegetable fat and fry onion, bacon or whatever you like. You can also skip frying ;) Drizzle the pea "cheese" with the fat and the toppings and serve.

Makes a nice starter :))
