
Green Tea and Mint Panna Cotta
A white-chocolate panna cotta flavored with matcha green tea, decorated with matcha-tinted white chocolate strips.
Ingredients
| 450 ml | sour cream, 30-35% fat | |
| 250 ml | fresh milk | |
| 2 tsp | 10 ml | matcha green tea |
| 2 tbsp | 30 ml | sugar |
| 100 g | white chocolate, broken into pieces | |
| 1 1/2 | powdered gelatin | |
| 50 g | white chocolate (for decoration) | |
| 1/2 tsp | 2.5 ml | matcha green tea (for decoration) |

For the panna cotta:
- Pour the gelatin into 60 ml water and leave for 5-7 minutes to swell.
- In a heavy-bottomed pot combine the cream, milk and sugar. Bring the mixture to a boil and immediately remove it from the heat. Add the green tea and stir well.
- Pour the milk mixture over the pieces of white chocolate and stir until you get a homogeneous mixture. Add the swollen gelatin and stir again.
- Pour the panna cotta into bowls of your desired shape, let it cool to room temperature and place in the refrigerator for 4-5 hours or overnight.
For the decoration: Melt the white chocolate in the microwave or over a water bath. Dissolve the matcha tea in one tablespoon of warmed cream and mix with the melted chocolate. Spread the melted chocolate over baking paper and leave for 30-60 minutes until it hardens. Use a sharp knife to cut the chocolate into thin strips and decorate the panna cotta with them.
