Ground Beef Stuffed Pepper Skillet

Ingredients

1 lb455 gground beef
1/2onion, diced
3 clovesgarlic, minced
1/2 cup120 mlgreen bell pepper, diced
1/2 cup120 mlred bell pepper, diced
14.5 oz canfire roasted diced tomatoes
3/4 cups180 mluncooked long grain white rice (Jasmine)
2 cups480 mlbeef broth
2 tbsp30 mltomato paste
1 tsp5 mlItalian seasoning
1/2 tsp2.5 mlsalt
1/4 tsp1.3 mlblack pepper
1 1/2 cups360 mlshredded colby-jack cheese
1 tbsp15 mlfresh parsley for garnish

Instructions

  1. Brown the ground beef with the onion and garlic in a skillet over medium heat until the ground beef is fully cooked, crumbled and no longer pink. Drain and discard any fat. Place the skillet back on the heat and add in the bell peppers, diced tomatoes, rice, beef broth, tomato paste, Italian seasoning, salt and pepper. Stir to combine and bring the mixture to a boil.
  2. Reduce the heat to a simmer, cover and let cook for about 18 minutes, until the rice is cooked through.
  3. Fluff the rice with a fork and top with the shredded cheese. Cover again and let the cheese melt over low heat. Garnish with fresh parsley and enjoy!
