
Ground Beef Stuffed Pepper Skillet

Ingredients

| 1/2 | onion, diced | |
| 3 cloves | garlic, minced | |
| 1/2 cup | 120 ml | green bell pepper, diced |
| 1/2 cup | 120 ml | red bell pepper, diced |
| 14.5 oz can | fire roasted diced tomatoes | |
| 3/4 cups | 180 ml | uncooked long grain white rice (Jasmine) |
| 2 cups | 480 ml | beef broth |
| 2 tbsp | 30 ml | tomato paste |
| 1 tsp | 5 ml | Italian seasoning |
| 1/2 tsp | 2.5 ml | salt |
| 1/4 tsp | 1.3 ml | black pepper |
| 1 1/2 cups | 360 ml | shredded colby-jack cheese |
| 1 tbsp | 15 ml | fresh parsley for garnish |
Instructions
- Brown the ground beef with the onion and garlic in a skillet over medium heat until the ground beef is fully cooked, crumbled and no longer pink. Drain and discard any fat. Place the skillet back on the heat and add in the bell peppers, diced tomatoes, rice, beef broth, tomato paste, Italian seasoning, salt and pepper. Stir to combine and bring the mixture to a boil.
- Reduce the heat to a simmer, cover and let cook for about 18 minutes, until the rice is cooked through.
- Fluff the rice with a fork and top with the shredded cheese. Cover again and let the cheese melt over low heat. Garnish with fresh parsley and enjoy!
