Sieve 200 grams of flour into a bowl. Add 50 milliliters of hot water with salt and stir slowly. Add another 50 milliliters of hot water with salt and stir until it can be kneaded. Knead for 10 minutes and make a ball. Wrap with plastic film and leave to stand for 10 minutes at room temperature.
Cut 1/2 cabbage, 1 leek, 2 cloves of garlic, spring onion and chives into very fine pieces.
Put in a bowl 400 grams of meat and add the garlic, 1 scoop of salt, cornstarch, some soy sauce, some sesame oil and 1 scoop of sugar. Mix everything well. Add the rest of the vegetables already cut and continue mixing. Cover with plastic film and keep in the fridge.
Take the dough and lengthen it to cut a total of 20 equal pieces. Flatten each piece with a rolling pin and cut each piece into 8-centimeter diameter circles. Use the leftover to create more slices.
Take a sheet and put some meat mixture in the center. Wet your fingers with a little water to close the dough. Close and make three folds on each side.
Place all the dumplings in a frying pan over medium heat with a little oil. Cook for 2 minutes and add a little water with sesame oil. Cover the pan and leave to cook for 5 minutes.
Place on a plate with some sauce made with 2 scoops of soy sauce, 1 and 1/2 scoops of rice vinegar, and some sesame oil.
