| 2 tbsp | 30 ml | cornstarch, dissolved in 1/4 cup cold water |
| 2 | garlic cloves, minced | |
| 2 | sweet peppers, deveined and chopped | |

| 2 tbsp | 30 ml | lard, at room temperature |

- Press the "Saute" button and melt the lard. When the lard starts to sizzle, add the beef stew meat and cook until browned on all sides; reserve.
- Add a splash of beef broth to the inner pot; use a spoon to scrape the brown bits from the bottom of the pan.
- Then, saute the onion, garlic, and peppers for about 3 minutes or until they are just tender.
- Add the other ingredients and stir to combine.
- Secure the lid. Choose the "Soup/Broth" mode and cook for 20 minutes at High pressure. Once cooking is complete, use a quick pressure release; carefully remove the lid.
- Mix the cornstarch with cold water in a small bowl; stir the slurry into the stew and cook on the "Saute" function until the cooking liquid has thickened.
- Serve warm and enjoy!
