Hirayachi - Okinawan Pancake
Thin, lacy, savory - Okinawa's answer to okonomiyaki, made with chives and dashi, and eaten straight from the pan.
Ingredients
| 1 cup (120g) | all-purpose flour | |
| 2 | large eggs | |
| 1 cup (240ml) | dashi stock | |
| 1/2 cup | 120 ml | chopped chives or green onion |
| 1 tablespoon | 15 ml | soy sauce |
| 1 tablespoon | 15 ml | vegetable oil |
| — | soy sauce and ponzu for dipping |
Instructions
- Whisk together flour, eggs, dashi, and soy sauce until smooth and lump-free. The batter should be thin and pourable.
- Fold in chopped chives.
- Heat vegetable oil in a non-stick skillet over medium heat. Pour a ladleful of batter and swirl to cover the pan thinly.
- Cook for 2-3 minutes until edges are set and bottom is golden. Flip and cook another 1-2 minutes.
- Slide onto a cutting board, cut into quarters or strips. Serve with soy sauce or ponzu for dipping.
