Hirayachi - Okinawan Pancake

Thin, lacy, savory - Okinawa's answer to okonomiyaki, made with chives and dashi, and eaten straight from the pan.

Ingredients

1 cup (120g)all-purpose flour
2large eggs
1 cup (240ml)dashi stock
1/2 cup120 mlchopped chives or green onion
1 tablespoon15 mlsoy sauce
1 tablespoon15 mlvegetable oil
soy sauce and ponzu for dipping

Instructions

  1. Whisk together flour, eggs, dashi, and soy sauce until smooth and lump-free. The batter should be thin and pourable.
  2. Fold in chopped chives.
  3. Heat vegetable oil in a non-stick skillet over medium heat. Pour a ladleful of batter and swirl to cover the pan thinly.
  4. Cook for 2-3 minutes until edges are set and bottom is golden. Flip and cook another 1-2 minutes.
  5. Slide onto a cutting board, cut into quarters or strips. Serve with soy sauce or ponzu for dipping.
