Hokkaido Cheese Soup

A warming bowl of Hokkaido's finest — melted cheese, potato, and cream in a broth that tastes like the island itself.

Ingredients

3/4 cup (90g)Mild melting cheese such as Gouda, grated
2Medium potatoes, diced
1Medium onion, diced
2 tablespoons30 mlButter
2 cups (480ml)Chicken broth
1 cup (240ml)Whole milk
1/2 cup (120ml)Heavy cream
to tasteSalt and white pepper
Chives or parsley, to garnish

Instructions

  1. Melt butter in a saucepan over medium heat. Add onion and cook 6 minutes until soft.
  2. Add potato and chicken broth. Bring to a boil, reduce heat, and simmer for 12-15 minutes until potato is very tender.
  3. Use a potato masher to partially blend, leaving some chunks for texture.
  4. Add milk and cream, heat over low heat. Do not boil.
  5. Stir in grated cheese a handful at a time until melted after each addition.
  6. Season with salt and white pepper. Serve in bowls topped with chives or parsley.
