Homemade Ghee

Clarified butter (ghee) made quickly in the pressure cooker's Sauté function.

16 ounces455 gunsalted butter

  1. Melt butter in a pressure cooker set to Sauté on Normal. Cook, stirring every 2 to 3 minutes, until the butter is about to brown, 7 to 9 minutes.
  2. Press Cancel and let butter cool slightly.
  3. Strain butter through a fine-mesh strainer or cheesecloth into a sealable container; cool completely before putting lid on container.

Mealthy Tip: Ghee can be stored in an airtight container in your kitchen cabinet for up to three months and stored in the refrigerator for up to one year. Ghee is ideal for cooking because it has a much higher smoking point than regular butter. Look for recipes from India, South Asia and the Middle East to find new and delicious ways to use ghee.
