
Horseradish mayonnaise
The horseradish makes the creamy mayonnaise tart and refreshing. Add the horseradish to taste, you can also use horseradish paste. Makes 1l.
Ingredients
| 100 g | egg yolks (or 5 fresh egg yolks) | |
| 5 g | salt | |
| 0.5 tsp | 2.5 ml | pepper |
| 10 g | mustard | |
| 30 g | vinegar | |
| 850 ml | oil | |
| as needed | lemon juice to taste | |
| as needed | horseradish, grated |
Instructions
- Ensure that all the ingredients are at room temperature.
- Mix the egg yolks with the salt, pepper, mustard and vinegar. You can do this with a whisk or a planetary mixer.
- Next, add the oil in a thin stream, continuing to whisk or mix slowly. Do not beat!
- Season with lemon juice and fresh horseradish.
Serving suggestions:
- As part of a starter, e.g. with smoked or marinated salmon.
- As part of an amuse-bouche, e.g. with a tuna cube with a wasabi crust.
- Use in a dish with components of poultry, tomato, and sweet pepper.
- Use in a dish with components of mackerel, fennel, and olives.
