Crispy Bananas
Air-fried panko-crusted banana pieces dusted with cinnamon sugar. With the cook's notes in parentheses.
Ingredients
| 1/2 cup | 120 ml | panko breadcrumbs |
| 1 1/2 tbsp | 23 ml | coconut oil |
| 1 tbsp | 15 ml | almond flour |
| 1 1/2 tbsp | 23 ml | cinnamon sugar (or a little cinnamon mixed with granulated sugar) |
| 1 1/2 tbsp | 23 ml | coconut oil |
| 4 | bananas, cut in half (the cook cut them into 4 rather than 2) | |
| 1 | egg, beaten | |
| 1 tbsp | 15 ml | crushed cashews (the cook omitted them as she had none) |
| 1/4 | corn flour (cornstarch) |
Instructions
- In a small pan heat the coconut oil, then stir in the panko breadcrumbs for 3-4 min.
- Remove from the heat and transfer to a bowl.
- Add the almond flour and the cashews and stir.
- Dip the banana in the corn flour, then in the egg and finally roll it in the breadcrumb mixture.
- Place the banana in the air fryer basket (she put perforated baking paper) and sprinkle with cinnamon sugar.
- Fry at 176°C for 10 min.
- (I don't remember whether I did them 10 min per side. I really just watched for them to turn golden and appetizing.)
