| 0.5 cup | 120 ml | basmati rice, soaked for 30 minutes and rinsed |
| 1.5 tbsp | 23 ml | olive oil |
| 0.5 tsp | 2.5 ml | black mustard seeds |
| 0.5 tbsp | 7.5 ml | split chickpeas |
| 0.5 tbsp | 7.5 ml | split skinless black lentils |
| 2 tbsp | 30 ml | raw peanuts |
| 5 | curry leaves | |
| 1 | green chili, sliced | |
| 0.5 tsp | 2.5 ml | minced ginger |
| 0.5 tsp | 2.5 ml | salt |
| 0.5 tsp | 2.5 ml | coriander powder |
| 1 pinch | turmeric | |
| 1 tbsp | 15 ml | lemon juice |
| 1 tsp | 5 ml | lemon zest |
| 1 cup | 240 ml | water |
Instructions
Method
- Press the sauté button on the Instant Pot and add the oil.
- Add the black lentils, chickpeas and mustard seeds in the hot oil. Stir-fry for 2 minutes. Add the raw peanuts and stir-fry for 2 minutes.
- Add the salt, turmeric, coriander, ginger, green chilies and curry leaves and stir-fry for 30 seconds.
- Add the rice, water, lemon juice and zest. Mix well.
- Cover with the lid and cook on high pressure for 6 minutes.
- Do a natural release for 10 minutes.
- Fluff the rice with a fork and serve.
