Indian-Style Rice

Indian cuisine is exotic but also very delicious. Such is the following recipe for everyone who loves rice.

Ingredients

2 cups480 mllong-grain rice, preferably basmati
8 cups1.9 lwater
2 pcscloves
2 pcscardamom pods
2 pcscinnamon sticks
3 tbsp45 mlbutter
1/2 tsp2.5 mldark mustard seeds
1/2 tsp2.5 mlcumin
1/4 tsp1.3 mlchili flakes
1 pcmedium onion, chopped
3 pcsgarlic cloves
1/4 tsp1.3 mlturmeric
2 pinchessalt

Instructions

  1. Put the rice in a sieve and rinse it with cold water. The rice is washed when the water passing through it becomes clear. Soak the rice in cold water for 30 minutes.
  2. In a large pot put the water and salt and wait for it to boil. Into the boiling water add the rice, cardamom, cloves and cinnamon and let it simmer for 10 minutes. Depending on the firmness of the rice, it may need a few more minutes.
  3. Put the rice in a colander and rinse with cold water. Remove the cardamom, cloves and cinnamon. Let the rice drain.
  4. In a pan large enough to hold the rice, heat the butter over medium-high heat. Add the mustard seeds, cumin and chili flakes, fry until the mustard seeds start to pop. Add the onion and fry for 5-7 minutes, until the onion becomes slightly brown. Add the rice and garlic, saute for another 3 minutes. Sprinkle with turmeric, stir well. Saute for another 3-4 minutes.
  5. Note: If you don't have cardamom pods and cinnamon sticks, add a pinch of ground cardamom and ground cinnamon in step 4. You can replace the mustard seeds with prepared mustard and the chili flakes with chili sauce, in which case you add these two ingredients at the end together with the turmeric.
